Doc Adams has been producing ultra-premium wines from the world renown region of McLaren Vale since 2005. A professional partnership between two mates; Dr Darren Waters (Doc) and Viticulturist, Adam Jacobs (Adam) is how the brand name came to be.
The story and formation of Doc Adams comes from a story of adversity that lead to great opportunity. From 1998, Adam Jacobs developed and managed the Doc's vineyards at Sellicks Hill, nursing the grapes from the soil up. However, during an unfortunate period that saw more supply than demand in the Australian Wine Industry in the mid-2000s, Dr. Darren Waters and Adam Jacobs established Doc Adams Wines, and began their first vintage in 2005 as a winery brand and label. The 2005 Doc Adams Shiraz was born.
Giving full credit to the talent & flair of McLaren Vale's impressive grape vines, Viticulturist & Winemaker Adam Jacobs believes in minimal intervention in the handling of our ultra-premium fruit, because sensational grapes make sensational wine. Doc Adams fruit is sourced widely from the McLaren Vale region, scoping from the sea breezed vineyards of Sellicks Hill, to Willunga, central McLaren Vale town all the way through to scenic McLaren Flat to Blewitt Springs. This diversification of varied geological sites makes for fabulous combinations of wine flavours.
Today the wines produced by Doc Adams are youthful, fresh and fruitful styles. They are and will continue to be drink now styles but have the oak and alcohol behind them for longevity also. Our Shiraz wines depict the McLaren Vale region and our Cabernet Sauvignon wines are elegant and varietal. The Grenache and blends of GSM wines, Doc Adams produce are traditional and all white wines from Chardonnay to Sauvignon blancs are fruit dominate at all times.
